I feel bad for kind of neglecting my blogging lately. Playing gardener, housekeeper and nurse maid to a husband with a bad back has cramped my style. LOL I knew I didn't like working in the yard but having him unable to has reinforced my feelings on the subject. I was hoping that my vsg had cured that too! To make up for my neglect here's a weight loss surgery friendly recipe...
No Bake Lemon Cheesecake
4 oz. low fat cream cheese softened
1 regular size pkg of sugar free lemon jello
sweetener to taste (I use amount equal to 1/4 c.)
1 cup hot water
2 cup Fage 0% Greek yogurt
Put water and jello in blender and blend. Add rest of ingredients and pulse until blended. Pour into pie plate sprayed with Pam. Chill and enjoy. 8 servings.
NOTES: If you want a crust, try ground almonds. Also, try other flavors of jello like black cherry. Lastly, since this is no cook, you can taste and adjust the sweetener to your liking.
