Another way to make expresso

Who knew I would become so addicted to coffee after my vertical sleeve gastrectomy! LOL I've discovered yet another way to make excellent espresso without a machine. It's called cold brew coffee. Maybe I'm the last one to hear about this method but I love it, especially for cold coffee drinks.

The coffee that results from this process is considered a concentrate. It can be added to hot water for a cup of American, steamed milk for a latte, cold milk for a frap. Coffee brewed this way contains less of the acid and caffeine and is easier on the stomach.

The method couldn't be simpler. You put 1 pound of ground coffee into a container with 9 cups of cold water. Let it sit on the counter for 12 hours and then drain through coffee filters. If you let it sit longer it will get stronger and more acidic. Store it in the fridge after brewing. The first method I read went into a big deal about alternating putting in the coffee and water and not stirring. They made a whole process out of it. I dump in the coffee, add water, stir until all the grounds are wet and get done with it. I'm not much on following direction.

Most directions I read call for coarse ground coffee. Again, since I don't follow directs well, I've been using my favorite espresso grind. The results are a beautifully rich, almost creamy brew. It's strong with no bitterness and very little acid. I've been loving this for my iced coffee drinks. I try to watch my protein after the vsg and I've been enjoying protein fraps almost every day. It is so handy to have chilled espresso on hand!

Since I'm cheap (yeah, I know the pc word is thrifty) I'm using the basket holder from an old electric drip coffee maker as well as the carafe to strain it. Works pretty well, I have to change the filter twice to get it all done. If you want to make it easier, there's a product called the coffee toddy that does it all for you. Hmm, I think it's time for an iced coffee!
