I had 1/2 a pound of ground turkey left from the night before so I decided to make soup. Since I'm post WLS I ate mostly turkey and a little of the soup...
Italian Meatball and Cabbabe Soup
use the recipe for Italian turkey sausage in my last post but form it into little meatballs (this will give you 1/2 pound of meatballs)
Place the following in a sauce pan:
1/2 small head of green cabbage
1/2 c. chopped onion
15 oz chicken broth
14 oz can small diced tomatoes with juice
14 oz can of canellini beans, or navy beans, or chick peas - drained
good dash of Italian seasoning
salt and pepper
Bring to boil and cook until cabbage is almost tender, about 15-20 minutes. Add meatballs and cook until meatballs are done. Serve with a sprinkle of parmesan cheese.
I was really good with my eating yesterday. I think I'm back on track. Tonight is new year's eve, but we're staying home since DH is still recovering from heart bypass surgery. I'm not sure what I'm cooking tonight, maybe we'll grill some steaks. Tomorrow is new year's day, I'll have to think of something with pork and black eyed peas if I'm going to stay a self respecting southern girl!
